Fiberlicious Muffins

Here is a recipe that I made this morning. Not only are these muffins perfect for breakfast but they are sooo yummy and good for you too. They are a great source of whole grains and high fiber, and the flaxseed provides Omega-3 oils. They were a big hit with my small children.

Fiberlicious Muffins

1 cup Multigrain cereal with Flaxseed and Soy ( I use Hodgson Mills brand)
1 cup organic, unbleached flour
1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 cup organic sugar
1 cup shredded organic carrots
1 cup peeled and chopped organic apples
1/2 cup organic milk
2 organic eggs (free range)
1/4 cup vegetable oil
1/2 cup chopped pecans

Preheat oven to 400 degrees. Mix dry ingredients first and then add the others. Mix well. Spoon the thick mixture into a muffin pan and bake for 20-22 minutes or until golden brown.

    Hi tiffany,
    The recipe looks great. I suggest you stay away from using “vegetable oil”. I would substitute olive oil or butter for the oil in this recipe. If you want to learn more about how unhealthy vegetable oils are check out the Weston A Price Foundation website: http://www.westonaprice.org

    One more thing….there are alot of articles on the Weston A Price foundation website….one that is very interesting is this one: The Oiling of America.

    Several years ago I went to go see Sally Falon speak and she gave this presentation….you will never eat “vegetable oil” again if you read this aritcle.

    The Weston Price Foundation also has a very good book called: Nourishing Traditons.

    I have been using this book for 5 or 6 years now. Although I don’t do everything “right” I try to follow as much of it as I can….this definately had a big influence in my families diet. I highly recommend the book Nourishing Traditons. It is more than just a recipe book.
