Easy Ideas for Leftover Brown Rice

Last night I was looking to use up some delicious mushrooms I got in my weekly produce box. So I chose to make some brown rice and have rice and sauteed mushrooms for dinner. Quick, easy, tasty.

But since I don’t make rice all that often I was wondering how I might use the leftover rice (about a cup). I asked the Natural Family Living Facebook fans and the responses were great! Here are some ideas for using up that leftover brown rice…

* Mix in with soup for lunch or dinner the next day
* Rice balls
* Puree with fruit for baby food
* Fried rice w/veggies
* Egg fried rice
* Stir Fry
* Arancini balls
* Rice/veggie loaf
* Bread
* Rice pudding
* Quiche crust
* Rice cereal w/maple syrup, milk, nuts, and fruit
* Salad
* Burrito wraps
* Beans and rice
* Nachos topping

I opted to use it up today in a veggie stir fry for lunch since I also wanted to use up some Baby Bok Choy from the aforementioned produce box. Yum!

  • Great ideas, thanks! I made brown rice last night & have plenty of leftovers. I’ll probably add it to a red beans & rice recipe in my Moosewood Restaurant Cookbook.

    We make rice cakes in the morning.

    Mix rice with just enough eggs and flour (or pancake mix) so that rice sticks together. Add apples and cinnamon, bacon and onion or whatever combination you prefer. Fry in a frying pan and serve with butter (syrup if it applies).

    My mom used to make this “green rice” recipe we couldn’t get enough of.

    Blend together 2 or 3 eggs, 2 tbsp of olive oil, half a cup of Parmesan or Romano cheese, a small bunch (about 1/2 a cup) of fresh parsley, 1/2 a cup of milk.

    Spread the leftover rice on a non-stick or greased baking pan, pour the mixture over it and mix well. Bake for about 30 minutes.

    Cut is small squares and serve. It is perfect to pack for lunch and bento boxes.

    I used it to make muffins in lieu of flour. Awful!!! I won’t do that again.
