Fall in Ohio...there is nothing like it. The cool weather sets in and suddenly my crockpot and oven are gong non-stop with muffins, baked apples, beef stew, meatloaf, and anything pumpkin. Sweet Potato Pancakes with Goat Cheese and Coconut
We had primal meatloaf and mashed sweet potatoes last night. I made a bit more sweet potatoes then I knew we would need because I was already thinking about lunch for the following day. This recipe makes abut 10 medium size pancakes and is perfect for feeding two (usually me and my husband) but we easily double and triple this recipe for when the kids are home. Saw this fun blog post on the Carrots N Cake blog (which I love) and decided to create my own A to Z list of all the simple things in life that make it so fun and delicious. A - Apples.
