A few years ago I made my first dish with Quinoa. I made a rookie mistake and did not rinse the dry Quinoa thoroughly first so it had a bitter taste that no one in my family liked.   This is actually my fave soup evah! Or maybe it is tied with my Mushroom and Sherry soup, tough call. Either way this soup is nourishing and delicious and it utilizes one of my fave veggies... the leek.
