This is a yummy recipe perfect for after school snacks or for homeschool snacks. Kids like these because they are easy to just pop in their mouth while on the run and my kids can just gobble baby tomatoes like candy. They are super good for you AND vegan!
What You Need:
30 cherry tomatoes
3/4 cups Pine nuts, ground
1/4 cup Sunflower seeds, ground
1 tablespoon cold pressed olive oil
1 teaspoon sea salt
handul of cilantro
few cloves of garlic, peeled
1 lemon, juiced
2 tablespoons nutritional yeast
1 tsp. celery salt
How to Make It:
Remove the tops of the cherry tomatoes.
Remove the seeds and set tomatoes aside.
Place remaining ingredients in a food processor and mix together well.
Fill each tomato with the mixture.
Cover and refrigerate until ready to serve.
