Sweet Potato Pancakes with Goat Cheese and Coconut

We had primal meatloaf and mashed sweet potatoes last night. I made a bit more sweet potatoes then I knew we would need because I was already thinking about lunch for the following day. The ingredients: 1/2 cup coconut oil 1/4 cup molasses or honey 1/2 cup maple syrup 1 tsp. vanilla extract 1 and 1/4 cup spelt flour (use 1 cup coconut flour as a substitute if desired) 1/4 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. aluminum-free baking powder 1 cup oats 1/2 cup raisins The process: Preheat oven to 350 degrees.
