I grew up eating pineapple oatmeal breakfast cookies and for many months now I have had a hankering for some. This past weekend I asked my mom for a refresher course on how to make them and after adapting the recipe a wee bit I have made these cookies for breakfast all week long. Healthy Carrot Cake
Ingredients 2 c. spelt flour or whole wheat flour 2 tsp. baking soda 2 tsp. baking powder 2 tsp. cinnamon 1 tsp. salt 2 c. grated carrots 1 c. milk, coconut milk, almond milk, or rice milk 1 1/2 c. applesauce 1 c. pure maple syrup, 1/2 c. crushed walnuts Preheat the oven to 350F.
