Fiberlicious Muffins With Apple and Flax

By Tiffany Leave a Comment

Here is a recipe that I made this morning. Not only are these muffins perfect for breakfast but they are sooo yummy and good for you too. They are a great source of whole grains and high fiber, and the flaxseed provides Omega-3 oils. They were a big hit with my whole family. Even when the kids were little they scarfed these down. Fiberlicious Flax Apple Muffins 1 cup Multigrain cereal with Flaxseed and Quinoa ( I use Hodgson Mills brand) 1 cup organic, unbleached flour 1 Tbsp. baking … [Read more...]

5 Minute Raspberry Spinach Sorbet

By Tiffany 5 Comments

Looking for a cool summer treat that is easier than churning ice cream for hours and healthier than the stuff the ice man sells? This quickie sorbet is tasty, refreshing, healthy, and kid approved. I love that is so easy and fast to make as well. When the kids come inside after a long day playing outside or they finish up a sweaty session at their CrossFit Kids class I can make this up in a flash and not worry about unhealthy ingredients. In fact this sorbet has greens in it! It may be Popeye's … [Read more...]

Living the Green

By Tiffany 4 Comments

I don't typically shop at WalMart but as with most conventional stores there are usually a couple things I might need or buy there, even if the bulk of my shopping is done elsewhere. There are two items I might go to WalMart for. The first is organic coconut sugar since it is $1.30ish less than my regular grocer, for the exact same brand/size. I don't use it often but there is at least one recipe I make once or twice a month that tastes best when I use coconut sugar and I cannot stand to pay … [Read more...]

Paleo Banana Zucchini Bread Recipe

By Tiffany 11 Comments

I created this recipe shortly before I started the Whole30, which I did all last month. Blogging about delicious grain free bread that I cannot have on the program (due to the coconut sugar) was not on the menu so alas I bring it to you now. The Whole30 was a huge success by the way and I find that staying strict paleo has gotten much easier and after the 30 days I decided I didn't need dairy anymore so I am now dairy free (except for ghee) and truly paleo, not just primal. I am also feeling … [Read more...]

Post Workout Snacking – Green Protein Shake & Cocomo Joe

By Tiffany 4 Comments

I am on a protein shake roll lately. This is my third this week. After today's CrossFit class I made the green monster you see below. Made with coconut milk, protein powder, Superior Greens powder, some frozen peaches/cherries, and some ice cubes. Yes, that is a pickle jar. ;) I also had a Cocomo Joe bar. It is paleo and made with nuts, coconut, fruit, chia seeds, and other ingredients like maca root, all organic. My hubby really likes them but I think they are just "okay". I am pretty sure … [Read more...]
