Recently Nicole commented on this post that she wanted me to post the recipe I used for the delicious organic Peanut Butter Carob Balls I described. So here it. I got it from one of my favorite books: The Healthiest Kid in the Neighborhood.
Peanut Butter Carob Balls (makes 30 small balls)
1/2 cup carob powder
1/2 cup honey ( I used raw)
1/2 crunchy peanut butter
1/2 cup raw sunflower seeds
1/2 cup sesame seeds
1/2 cup oats
1/2 ground flax seed meal
Mix all ingredients together by hand. Form the batter into bite size balls and roll them in shredded coconut.
Yum!

Oh my goodness, these look delicous!
Great idea to add flax seed meal! I first got a kitchen when I was 8 and peanut butter balls were the first things I made. I love your recipe and will have to try it with almond butter.
In our house we often use carrob for many recipes, but this one sounds really good and I think I’ll definetely have to try it.
We are trying these today. Just got back from the health food store and my 3 yr old will help put it all in and mix. I am involved in a nutrition seminar this evening at my sons school (age 7) and will be making these to share with the guests. Thanks for all you do and what a help you have been in our toxic free life.
Thanks so much for posting this. My mom is allergic to chocolate but she loves carob! I have been trying to find a good recipe to make her for Christmas! I am sure she is going to love this especially since it has flax seed meal in it!
