My husband and I love a good quiche. But if we want to keep it paleo/keto, we have to do without the crust. This quiche is so yummy that I do not even miss a flaky crust. It is super easy to make, just toss everything in a pie pan and bake. I like kale and mushrooms in my quiche but you could use almost any kind of veggies. Spinach and broccoli for instance would be good additions. Try it a few different ways and see what you like.
I like to make one or two of these on the weekend and my husband and I will eat a slice for breakfast or lunch over the next couple of days. It never goes to waste.
Keto Breakfast Quiche
8-10 Pastured eggs, whisked well
2 Tbsp heavy cream
1 Cup white or cremini mushrooms, chopped
1/3 lb bacon, cooked and chopped
1 small onion, minced
2-3 cups chopped kale
1/2 cup grated parmesan cheese
Mix together and pour in a pie plate. Bake for 40 minutes at 350 degrees or until center is done.
