Raw Fudge Cookies

A hankering for something sweet hit me this afternoon so the kids and I made some raw chocolate cookies. They turned out rather delicious and they were super easy to make.

Ingredients: cacao powder, nuts (I used almonds, pecans, and macadamia nuts), agave nectar, coconut butter, and vanilla.

After mixing everything in a Blendtec I put them in the freezer to get hard and easier to eat, otherwise they are really gooey.  These are going to be perfect  for Easter nests if we add some shredded coconut. Yum!

  1. These look so good… would you mind sharing how much of each thing you put in? I have a blendtec… and all the ingredients…so this would be a perfect recipe for our family this weekend!

  2. 1 and 1/2 each nuts, 1 cup agave, 1/4 cup coconut butter, 1 tsp vanilla, 1 cup cacao powder. Split the nuts in half and process them first. Half of them ground fine and the other half ground chunky and then add the chunky ones at the end and mix by hand.

    which blender do you like better- your Vita Mix or the Blendtec. Sounds like you have both and I would like to get one, but wondering which is best. Thanks much!

    Without having any idea of proportions (I hadn’t yet read the comments), I made these for my family. They are AWESOME! I shared some with my neighbours (I live in a cohousing community) and they LOVED them. I used completely different proportions to yours and still they were amazing, so really, I say tweak to your own tastes – no matter what, this combination of ingredients is delicious! Thanks so much for the great recipe. I WILL be making these again.
