I have alot of readers ask me if I ALWAYS eat healthy food and if so, what do I eat? Well, I would like to say that I always make meals that are supremely healthy for myself and for my family but in actuality eating healthy is a process. We do not always eat perfectly healthy but we put forth our best effort and we are always trying to devop healthy habits.
For breakfast this morning we ate Fiberlicious Muffins. For lunch we had delicious tomatoes drizzled with Extra Virgin Olive Oil (EVOO) and Italian spices and covered with a thin layer of fresh mozarella cheese. For dinner I made whole wheat linguini with a Saffron and white wine sauce and artichoke hearts. We also had some whole wheat bread that we dipped in a plate of EVOO and Italian seasoning. I would have liked to include some steamed veggies in there somwhere.
I feel pretty good about what we eat most days. Several years ago we would have had pasta and bread made with white flour. The bread would have been slathered with butter. The muffins would have been covered in powdered sugar. Things have changed alot since then. :) We grow and we make changes and those changes hopefully lead us to a healthier diet.
