I grew up eating pineapple oatmeal breakfast cookies and for many months now I have had a hankering for some. This past weekend I asked my mom for a refresher course on how to make them and after adapting the recipe a wee bit I have made these cookies for breakfast all week long. Healthier Old Fashioned Oatmeal Cookies
The ingredients: 1/2 cup coconut oil 1/4 cup molasses or honey 1/2 cup maple syrup 1 tsp. vanilla extract 1 and 1/4 cup spelt flour (use 1 cup coconut flour as a substitute if desired) 1/4 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. aluminum-free baking powder 1 cup oats 1/2 cup raisins The process: Preheat oven to 350 degrees.
